Actividad antimicrobiana y cinética de fermentación de Weissella confusa contra Xanthomonas albilineans Acta Agron. (Palmira)

Se evaluó la actividad antimicrobiana de Weissella confusa, una bacteria ácido láctica, contra Xanthomonas albilineans, microrganismo productor de la escaldadura de la hoja en la caña de azúcar. Se midió la cinética de fermentación de la bacteria ácido láctica en sustrato comercial (MRS) y en residuos agrícolas de cosecha de caña de azúcar (RAC) provenientes de semilleros con 7 meses de edad. Se realizaron fermentaciones sumergidas a 32 °C, cada hora hasta 4 horas, a pH 6 y 100 r.p.m. de agitación. La pitahaya amarilla (Selenicereus megalanthus How) es una fruta exótica con gran potencial comercial. No obstante, sólo ha sido aprovechada comercialmente como fruta entera, sin procedimientos que le den valor agregado y mayor tiempo de vida de anaquel. En este trabajo se evaluó la aplicación de 200 mg%lt de 1-MCP (Metylciclopropene) en pitahaya amarilla mínimamente procesada (rodajas con cáscara y sin cáscara), empacada al vacío y almacenada bajo refrigeración, sobre la intensidad respiratoria y parámetros de calidad como sólidos solubles, acidez total titulable, pérdida de peso, azúcares totales, firmeza y color. Effect of plantain ( Musa paradisiaca L. cv. Dominico Harton) peel flour as binder in frankfurter-type sausage Acta Agron. (Palmira)

Abstract Agroindustrial residues such as plantain (Musa paradisiaca L. cv. Dominico Harton) peel have functional properties, which made them suitable for use as a food ingredient. The aim of this research was to evaluate plantain peel flour (PPF) as a binder in the production of frankfurter- type sausage. Five formulations were prepared in which wheat flour (WF) was replaced by PPF as follows: 25%, 50%, 70% and 100%, respectively. Once the sausages are obtained, water retention capacity (WRC), emulsifying stability (ES), and pH, were evaluated. When comparing treatments with the control sample, it was found that replacing up to 50% of WF by PPF, significantly increased WRC by 7.5%. However, growth conditions and conservation methods may reduce the viability and antimicrobial activity of lactic acid bacteria. This study evaluated the effects of fermentation substrate, lyophilization (freeze-drying) and refrigeration on the viability and antimicrobial activity of Weissella confusa strain and its metabolites against pathogens responsible for bovine mastitis. Background: The fermentation substrate efficiency of glucose supplemented with guava seed flour (GGSF) or glucose supplemented with dry Aspergillus niger mycelium (GANM) was evaluated during the production of biomass and antimicrobial compounds by the lactic acid bacteria Weissella confusa. Results: The fermentation substrate efficiency was measured by comparing the biomass formation, substrate consumption, substrate conversion, antimicrobial activity and product yield. A utilização de bactérias do ácido láctico (LAB) como uma alternativa ao uso de antimicrobianos tem sido proposta para o controle da mastite bovina. No entanto, antes dessas aplicações, o efeito in vivo das LAB sobre a glândula deve ser cuidadosamente avaliado. O objetivo deste estudo foi determinar se a infusão intramamária de Weissella confusa e seus metabólitos em vacas afeta a contagem de células somáticas (CCS) e a contagem diferencial de leucócitos no leite. Abstract This paper presents a review on hydrogels applied to agriculture emphasizing on the use of natural fibers. The objectives were to examine, trends in research addressed to identify natural fibers used in hydrogels development and methods for modifying natural fibers, understand factors which determine the water retention capacity of a hydrogel.
